TASTING NOTES
Color: deep straw yellow with greenish hues;
Smell: intense, of tropical fruits especially banana and pineapple combined with pleasant sensations of vanilla and toasted from the aging in wood;
Taste: fresh, very soft and very persistent.
GASTRONOMIC PAIRINGS
Due to its characteristics it is suitable for aperitifs, appetizers and is excellent to accompany fish dishes.

FEATURES
The grapes are harvested between the end of August and the beginning of September.
Arrived at the company, it is de-stemmed, crushed, cooled to a temperature of 10-13 ° C and sent to the pneumatic press to separate (soft pressing) the skins from the must. The latter is then left for a couple of days in thermo-conditioned stainless steel tanks at a temperature of 13 ° C to allow the separation of the slurry.
Alcoholic fermentation takes place on the clear must, which takes place at a temperature of 13-18 ° C and lasts about ten days.
At the end of fermentation, about 25% of the chardonnay is placed in new barriques (225 L) where it completes the alcoholic fermentation, carries out the malolactic fermentation and is periodically stirred (bâtonnage) to favor the contact between lies (yeast cells) and wine, while the remainder always remains sur lies, but in stainless steel tanks.
Finally, before the summer, the two quantities come together and the Langhe DOC Chardonnay, after a few decanting, is bottled and launched for marketing.

The Company Agricola San Martino includes 8 hectares of property, of which 3 hectares of vineyards surrounded by woods, ventilated by the Ligurian breezes and kissed by the sun.
Most of the vineyards are cultivated in Dolcetto and are located on the slopes of Clavesana.The soul and prestige of the Az. Agricola San Martino are recognized above all in the character of the "Dogliani D.o.c.g Superiore", the noblest of red wines, obtained from a careful and severe selection of Dolcetto docg grapes and from the selected productions of Sauvignon Blanc and Chardonnay.
